Chef Mecinas believes that using ingredients from local farms, such as fresh heirloom tomatoes for the Sunizona Tomato garden selection, lends authenticity and a sense of place to Talavera. He also looks for Arizona-ranch raised meats for the C.O.W. (cut of the week) and other signature dishes. For a truly transcendent culinary experience, a six-course tasting menu is available, with the option of sommelier-selected wine pairings with each course.
