For nearly two decades, the restaurant has garnered local and national acclaim for its romantic setting and thoughtful menu. Dine by candlelight on one of two patios, surrounded by blooming bougainvillea, cozy fireplaces and magnificent mountain views, or enjoy the vibrant new dining room. You can also plan an elegant private dining experience in The Delos dining room or Vernadero (originally Cooke’s Living Room). Wherever you choose to dine at T. Cook’s, you can be sure that the menu will serve as a perfect complement to the setting, enhancing your experience all the more. Executive Chef Paul McCabe and his team create seasonal menus using herbs, vegetables, citrus and seasonings from the restaurant’s on-property garden, in a style they describe as “crafted, thoughtful and bold… with the principles of fresh, seasonal, local and ingredient-driven cooking.” Menu selections may include organic greens or a roasted beet salad, and seasonal soups; main dishes range from chicken and steak to Colorado lamb and Texas antelope, with fresh seafood and vegetarian options as well. Breakfast always includes a house-pressed juice of the day, as well as fresh citrus juices and fresh berries; Lemon-Ricotta Flapjacks are always a favorite. A variety of fresh salads and sandwiches grace the lunch menu. T. Cook’s serves breakfast and dinner daily, with lunch Monday through Friday and brunch on Saturday and Sunday.
